Method: 

PREP: Break cauliflower into florets. Peel and cube the sweet potatoes. Slice the onion. De-seed and finely chop the chilli. Trim and halve the green beans. Juice the lemons.

1. Preheat oven to 220C/fan 200/gas 7.

2. Pour the oil into a large oven-proof dish and heat through in the oven.

3. Place all of the vegetables except the green beans in the dish stiring to coat with the oil. Season with salt and pepper. Place in the oven for about 15 minutes until the vegetables begin to brown.

4. Meanwhile, mix together the hot stock, curry paste, chilli, saffron and mustard seeds.

5. Mix the rice and green beans with the other vegetables then pour over the stock.

6. Reduce oven temp to 190C/170C fan/gas 5.

7. Cover the dish tightly and bake for 30 minutes until liquid has been absorbed and rice is tender.

8. Stir in the lemon juice and check the seasoning.

9. Scatter over the coriander leaves and cashews.

10. Serve with poppadums.
