PREP: Separate the egg yolk from the white and retain.

1 Grease an 18cm/7inch square shallow tin. (Or double quantities and use a small Swiss roll tin.

2 Preheat oven to Gas 5, 375°F, 190°C.

3 Cream together the margarine and 25g/1oz sugar until light and fluffy, then stir in the egg yolk and fold in the flour.

4 Press this mixture into the tin and spread some jam over the top of it.

5 Whisk the egg white until stiff, then gradually whisk in 50g/2oz sugar. Fold in the coconut.

6 Spread the meringue mixture on top of the jam and bake the cake in the middle of the oven for 35 to 40 minutes.

7 Cut the cake into portions in the tin while it is still warm.
