Method: 

PREP: Zest and juice the lemon. Preheat the oven to 350F/180C/160C fan/Gas 4.

1. Sift the flour, baking powder and 6oz sugar into a large mixing bowl.

2. Combine the margarine and slowly beat in the milk and eggs. Mix in the lemon zest.

3. Transfer the resulting mixture to an 8 inch non-stick loaf tin.

4. Bake in the oven for 1 hour.

5. In the meantime, mix the 4 oz caster sugar with the lemon juice

5. Turn out the cake onto a large flat plate. Make a number of vertical holes through the top with a skewer.

6. While still hot, gently pour the lemon juice mixture over the top of the cake, scooping any that runs down onto the plate back on top.

7. Transfer on to a wire grid to cool.

8. Enjoy!
